Fig is a popular request I get, and not one I feature often – not because I don’t like it, but it’s a tricky flavor to work with (putting figs in hot water does not taste the same as warming them with some goat cheese - yum!)
But I decided to take this unique flavor profile and make it even more unique with the addition of lemon and coconut – it’s inspired by afternoon tea at a really nice local hotel. The resulting flavor profile is more than the sum of it’s parts… it’s got creamy notes, sweet notes, tangy notes… I feel like it’s one of those teas where you ask 5 people what it tastes like and each has a wildly different answer.
